There's been some movement on the Perth dining scene this year and some emerging trends. Kitchen gardens are in. Local producers are definitely in - it seems no chef wants to put interstate protein on a plate unless they absolutely have to. It's all part of the growing locavore movement (buying local) which ties into the international Slow Food theology of 'underwriting' local producers by encouraging them to grow products that chefs just aren't prepared to buy from the central markets anymore.

For the customer it all boils down to better, fresher, more carefully grown produce and access, through our restaurants, to specialist produce not readily available elsewhere: cavolo nero, nettles (great in risotto), hand-caught scallops, tidal farmed barramundi, heritage tomatoes, varieties of Asian eggplants and so on.
